SAGE: Signature Menu, Aria Las Vegas – Reasonably Priced + Unique Beer Pairing

  • Located in the Aria Hotel and Casino, Sage provides a delicious tasting menu of Artisinal American (fusion) cuisine that I highly recommend if you are looking for a tasting menu that is more affordable than the Michelin rated restaurants in Las Vegas.
  • We were a party of three, so we each tried to order different items for each course to try out the different Signature Menu dishes, which were all very well executed.
  • Both wine and beer pairings come at $44 per person. We opted for the beer pairing, since we encounter wine pairings more often. However, beware that you might become very full from all the beer!
  • The setting of the restaurant is dark, sophisticated, and comfortable. I would recommend this place for a romantic night out or a great meal with friends.
  • Other menus are available and can be viewed on the restaurant’s website. Besides the $89 Signature Tasting Menu, there are also the $59 Early Evening Menu, Chef’s Tasting Menu ($150), Dinner Menu (a la carte), and a Dessert & Absinthe Menu.

The Details:

I was staying at the Aria SkySuites and saw Sage near the main registration area. After looking up the restaurant online, my friends were skeptical of what “Artisinal American” cuisine was, but I still pushed them into giving the restaurant a try. We were all glad we did, as each course was very well executed.

Sweet and salty deliciousness! This dish went well with the bread, making it not too heavy.

Fresh, yet I felt that it was the least unique out of the choices for the first course that we chose.

I poked the poached egg and mixed the dish up to be put on pieces of thin crispy bread. The mixture of sour, salty, and bitter flavors combined was exciting to the palate. A great amount of the tartare can be put on the pieces of bread provided with this dish.

The sound of scallops was just too enticing, that all three of us decided to order this for our second course. The scallops were HUGE and juicy. The braised oxtail with wild mushrooms were a good compliment to the dish. The sauce was great, adding flavor without being too salty and allowing you to still taste the freshness of the scallops.

The beef was tender and juicy with the sweet sauce. The contrast of textures with the crunchy toasted pistachios was great as well. The portions were very well adequate here, I was becoming very full.

We were all attracted to the unique words “Olive Oil Ice Cream” and proceeded to order this as our final course. Not only was this dish beautifully plated, there was a surprise when I dug into the chocolate in the center, where olive oil oozed out. The tart berries created a balance with the chocolate. This was a very unique dessert.   For the price of $89, the tasting menu at Sage is relatively more affordable than many other restaurants in Las Vegas. The food is great, and if you love beer, try the beer pairing! The beers paired went well with the food and were quite unique as well, definitely not your usual Heineken or Budweiser.
